- Au Revoir France
I'm back from my adventures in France and what a wonderful time I had. My favorite part of traveling is taking in all the new sights and meeting all sorts of new people. I talk to strangers everywhere I go... It is my favorite. 😊 I am always curious... “I wonder who lives in that house?” “ Where does that road go?” I had been to France once before, when my daughter and I stayed in Paris. I had won a “once in a life time” trip from Allstate insurance when I was an agent. We stayed for ten days in a lavish hotel that Morgan Freeman and the Kardashians had visited before. We explored the beautiful architecture and art in Paris and even had the Palace of Versailles closed specifically for our group. The adventures with my daughter included a private concert from Sting in the Opera House, a private dinner at the Louvre and a fancy outing on a yacht going down the Seine river... This time around, my trip could not have been any more different. It was back to reality for me. I was on a budget, deciding what to spend money on. I stayed at a charming hotel in the countryside of Normandy, France. A place full of history from World War II. It was surprisingly interesting to me. We went to several museums and tours on the beaches there. It was very emotional. Both my father and my son served in the US Air Force. Not in WW ll, but my dad did serve in the Korean War and came home with a Purple Heart. I couldn't help but feel the love and appreciation for all of those soldiers, all of those people who died; not just for our country but for the whole world. We spent hours over the next several days, rediscovering history. I remember leaning about it in school, but this time it came from a different perspective. It wasn't from the U.S. history books, but the story was the same. History = His Story and this time the story was being told through the eyes of the French. Several of the museums and the different battle sites had movies to watch or an audio tour. Most days you could find me crying while I was watching. I was moved to tears as I saw history unfold in front of me. A not so gentle reminder of what freedom costs. I will not forget the experience and I think I might even make it a point to watch some war movies, movies I have always purposely avoided up to now. On the other days we were fortunate enough to explore small little villages and towns. Ones of those days were went to the home and gardens of Jean Claude Monet. A beautiful day. And what a peaceful place. Yes even I’ll of visitors, it was amazing and felt quiet to me. I could have stayed there all day long. I took some great pictures. This is actually quite something or me, because that is one thing I am not usually good at. I feel blessed each time I look through them. I guess my favorite new experience was Mont Saint Michel. This is an Abby celebrating 1,000 years, this year. I am not sure but we heard that the little houses at the foot of the mountain were the house of the villagers. The attended the church at the Abby. The church was beautiful. Well preserved and immaculately maintained. Now all the little houses are shops and restaurants, a post office and tourist information. I probably went I each shop twice. So much to look at. There was a wine shop where I purchased several bottles as souvenirs for friends. Honestly, I can’t help but wonder who lived in those houses 1,000 years ago? Who were the priests and nuns? What was their ministry? How were they able to construct this beautiful creation without equipment? It’s on an island! On another note, I felt a great deal of accomplishment on this trip. My friend is nearly 20 years younger than I am. I didn’t fall a single step behind. I am not sure how many stairs there are. Many hundreds, to get to the Abby and many more, when you get in. It was over 80* that day and I didn’t break a sweat or take a rest. My working out has paid off! When a forty year old tells me she needs a break and I don’t need one, it makes every morning work out worth it. I am achieving my goal of living my life healthy and strong. I want to be able to enjoy every experience and not allow my vim and vigor to be an obstacle. And I have to admit, when I made my way up the mountain with ease, I actually heard my inner self saying “ Tah Dah” and that was a really great feeling. - Why Nap?
When I feel tired, naps are like little pockets of magic for me. Naps are so refreshing! and my secret weapon against drowsiness. When you catch some Z's, your brain gets a refreshing boost, making you more awake and ready to tackle anything that comes your way. Naps are like a memory makeover for your brain! While you snooze, your brain works its magic, strengthening connections and transferring important info from short-term to long-term memory. It's like giving your brain a memory boost, I need that! It gives you a creativity boost. When you take a break from the hustle and bustle, your mind gets a chance to make wild connections and come up with genius ideas. Albert Einstein, knew the power of a good nap for brilliant thinking. Helps manage stress. Life can be stressful, and naps are your friend. When you're sleep-deprived, stress levels skyrocket, wreaking havoc on your well-being. We need enough sleep if we are going to manage our stress response. Take a nap, it’s like a mini vacation for your mind. Helps boost productivity. When you're tired, your productivity drops. But a quick power nap, lasting around 10 to 30 minutes, can recharge your energy levels and skyrocket your productivity. You'll be revved up and ready to finish the job. Recharge Your Body. Napping isn't just good for your mind; it's a treat for your body too. While you doze off, your body gets a chance to repair tissues, boost the immune system, and replenish your energy levels. A well-timed nap can kick fatigue to the curb and leave you feeling refreshed and revitalized. You’ll feel better. Lack of sleep can turn even the most cheerful person into a grouch. Napping can save the day. By reducing fatigue and promoting relaxation, a nap can boost your spirits. You'll feel balanced, refreshed, and ready to smile again. Heart health. Research suggests that napping might have a heart-healthy side too. Some studies show that those who squeeze in short naps during the day have a lower risk of heart-related issues. While more research is needed, it's another reason to indulge in a little midday snooze. I don’t nap every day, but I do when I’m tired. I have noticed time and time again that allowing myself to nap makes me feel better and more productive. I set a 30-minute alarm when I nap. Short power naps of 10 to 30 minutes are the way to avoid that groggy feeling when you wake up. Research shows that longer naps can give you a full sleep cycle's worth of restoration but might lead to a temporary sleepy haze afterward. Also, short naps don’t affect my ability to fall asleep when I go to bed. I get my best sleep when I stay on my schedule. Naps are like little superheroes for your well-being. They boost alertness, improve memory, enhance creativity, reduce stress, supercharge productivity, and give your body some much-needed TLC. - Summer
It is important to remember that growth and improvement can happen at any time of the year, not just on specific dates like January 1st. And if you're like me, and have a strong drive for personal growth and achieving your goals, I hope that you regularly assess your progress... Late summer feels significant because we’ve past the midpoint of the year, and I begin to feel a sense of urgency to see the completion of my annual goals. This can be a good opportunity to reflect on what you've accomplished so far and reevaluate your approach for the rest of the year. Not quite there yet, it’s ok! We have to give ourselves grace and flexibility, it's normal to face challenges along the way. Instead of feeling discouraged if some goals are not yet completed, focus on the progress you've made and the positive changes you've experienced. Celebrate the small victories and use any setbacks as learning opportunities to adjust your strategies. As you move towards autumn and prepare to work on your goals for next year, make sure that you are setting goals that align with your purpose. Understanding who you are and why you do the things you do is important. This understanding has made a big difference in my attitude toward myself. Ready to discover your true purpose? - Weight Loss
In the midst of all the noise, there was a voice urging me to take charge of my health and happiness. It was time for change, and I felt the determination building within me. There were so many reasons to make this change – to be there for my future grandchildren and to reclaim the activities I loved so much, like wandering around amusement parks without any pain! I knew it was time to prioritize my well-being, inside and out. My weight-loss journey has been quite a ride, filled with ups and downs, but one thing was clear – when my knees started hurting, I knew it was time to give serious thought to my weight. Armed with the support of my incredible life coach, Bill Cortright, and faced with various health challenges, including high blood pressure and prediabetes, I made a conscious decision to not just commit, but to find a safe and lasting way to shed those pounds. And guess what?! I have already lost over 60 pounds and counting! Now, before we continue, let me say this – consulting a physician before starting any weight-loss program is crucial. Safety comes first, and I truly hope that some of the gems that worked for me will also benefit you with your doctor's guidance. So let me share the exciting strategies that have brought about this wonderful transformation: Water became my best friend on this journey! Committing to drinking more water than ever before has been incredibly fulfilling and backed by solid weight-loss science! I drink a gallon almost every day! I embraced my own version of intermittent fasting – not skipping meals but making sure I ate an early dinner and avoided late-night snacking. This helps me sleep better. And oh, the underestimated importance of sleep! I am an early riser and never made the effort to go to bed early. I would stay up for the social interaction at the cost of a food night’s sleep. I realized I needed to prioritize my rest, and after some effort, I now enjoy a refreshing seven hours of sleep consistently. It's been a journey, but well worth it! Learning to listen to my body has been a game-changer! Instead of reacting to every hunger pang, I took a moment to discern whether I was genuinely hungry or simply dealing with fleeting emotions or boredom. Removing foods that didn't bring me joy became a delicious way to approach my eating habits, and I bid farewell to alcohol and junk foods– no room for wasted calories! My go-to snacks became baby carrots, celery, and the delightful sugar-free jello! It's all about balance, right? I virtually eliminated fast food, processed meals, and large portions, and I learned that counting calories isn't the whole story – understanding the quality of what I ate was equally important. So I delved into tracking my macros with the help of the Lose It app! Investing in healthier choices was an investment in myself, and boy, did it pay off! And speaking of investments, moving our bodies was never meant to be optional – I embraced a goal of 10,000 daily steps and discovered my love for gym classes and weight training. I have learned to love the rowing machine! Building that muscle power for better health! I like to weigh myself daily. But I know, stepping on the scale daily may not be everyone's thing, and that's totally okay! We all have different approaches to staying accountable and feeling great on this journey. So, if daily weigh-ins don't float your boat, no worries! You can try other methods, like simply noticing how your clothes fit – that's an awesome way to gauge progress! Or maybe you prefer a weekly weigh-in or stepping on the scale only during doctor’s visits. Find what suits you best and do it. This journey is a lifelong adventure, and I'm in it for the long haul! There will be bumps along the way, but I won't give up – I'm great at getting up when I fall. I didn’t gain weight overnight and this transformation is a testament to the power of persistence and self-care. So, with the guidance of my coach and my inner drive, I'm walking this path of health and happiness, and you can too! Embrace your readiness, find your WHY, set realistic goals, and enjoy a life enriched with healthier choices and joyful activities! - Living on Purpose - Unlimited Potential
YOU have unlimited Potential. We all possess incredible potential, but it is meaningless if it is never realized. Living with potential is not enough; we must strive to live in alignment with our potential. Within each of us lies a dormant force that we have held back for far too long—a reservoir of dreams, gifts, and talents that long to be expressed. Despite the genuine calling in our lives, we often doubt ourselves and hesitate to step into our purpose. However, it is essential to recognize that every individual has a unique purpose and is destined for greatness, regardless of their background or circumstances. In this blog post, we will explore the significance of living on purpose and the transformative power it holds. Live With Purpose: Public speaking, for instance, is often regarded as one of the most common fears. I too, have struggled with confidence with this and other aspects of my life. I’d prefer to stay out of the spotlight. However, there was an unmistakable call in my life that I couldn't fully comprehend. It took changing everything I knew and deciding to walk towards my dreams, embracing my purpose. This decision is personal and applies to every one of us—you have a purpose, and your life has been destined for something amazing; even before you were born. You may feel this calling deep within, and it's time to acknowledge and embrace it. Stepping Out of the Comfort Zone: Of course, it's easier said than done! Everything is. We must let go of fears and step out of our cage-like comfort zones that hold us hostage. Our perspective can either confine us within a prison of self-doubt or empower us to unlock our true potential. We are all human, and we function and operate in remarkably similar ways. It's crucial to challenge the limiting belief that we are not enough. Take a moment to reflect on your definition of "enough." Often, we compare ourselves to unrealistic standards or ideals that don't even exist. It's time to discard this prison perspective. It is up to us to change our minds. Using Bill Cortright’s Let Go Technique you will be able to release limiting beliefs and self-author your identity. You get to say who you are! Remember, everything is easier said than done; yet we must let go of the excuses and take a step of faith. Believe in Yourself and Embrace Opportunities: In the face of challenges, we must adopt a new perspective—one that says, "No matter how hard or impossible it may seem, I will get it done." Viewing life from this vantage point allows us to see failures as opportunities for growth and learning. Instead of being defined by what has happened to us, we can focus on how these experiences have helped shape our lives. Every circumstance presents a chance to become more, do more, and experience a better life. Accept every opportunity, whether it appears favorable or unfavorable, and recognize that they are meant for your personal growth. Make a Plan and Do It! Making changes can be difficult. Sometimes we will spend our time planning and dreaming, but never get to the doing. I set goals with an intention connected to my purpose. Part of the higher goal setting process is imagining life with this goal already met. I'm a planner and a dreamer and most of the time a doer. I love vision boards. It helps me keep my eye on the prize. While creating vision boards and setting goals are valuable tools, they are meaningless without action. It's common to become infatuated with the vision itself yet fail to put in the necessary work to turn it into a reality. In this world, there are three types of people: watchers, joiners, and purposeful individuals. Many people spend their lives merely watching from the sidelines, never fully engaging with their purpose. However, when you connect to your purpose and take action, you become a gift to the world—a blessing to those around you. Don't keep your gifts wrapped under the tree; let your light shine and impact the lives of others. Faith in Your Dreams and Overcoming Doubt: Often, the people closest to us fail to understand the changes we are making because they are too close to see our true potential. Often, they just don't understand the calling that we have on our lives. But it is our calling not theirs. Seeking validation from others may lead to disappointment. Instead, have faith in your dreams and yourself. Remove the limitations you've placed on your aspirations, for the sky is the limit. Reality may not always align with your faith, but that should not deter you. Remember, your life’s purpose is yours alone, and you are only one choice away from a new beginning. Commit to your purpose and be willing to embark on the journey, even if others cannot see or understand it. Faith means having vision and trust in the unseen, and it's time for you to embrace and trust the vision. Start Today Living on purpose and fully embracing our potential requires breaking free from our comfort zones, letting go of the old programming that said, “I can’t”, and taking action. Each one of us has a unique purpose and the opportunity to make a significant impact on the world. Let go of doubt, know that your dreams are for you, and trust the vision within you. - White Bean Chicken Chili
I had never heard of white bean chicken chili before until I went to The Cheesecake Factory and tried to find something low calorie and healthy. This was a great find. Yummy! It was delicious So I tried to taste the flavors involved in it. I have tried to recreate it by taste. There’s was more complex but mine is tasty. Not just like Cheesecake Factory, but it is healthy and delicious. Why not give it a try? I am going to give you the recipe in two ways. Scan through and you will find a second way to make it very quickly. First, the way I made it from scratch. I have not tried the second way yet but I know that it would be nearly as good. I boil my own Great Northern beans-1 pound - follow directions on the package. In a separate pan saute’ 8 to 12 ounces of chicken breast diced, with one large onion chopped. I use a nonstick pan, so I don't add any fat When the onion is translucent and the chicken is lightly browned- about 5 to 7 minutes; add 1 to two cloves of garlic – peeled and finally chopped. I used poblano peppers – Hatch green chiles would be even better- but they are only available seasonally in late summer. Whichever you use follow these easy directions. *Place 2-4 chili peppers under the broiler on high or on the BBQ for about 5-6 minutes per side- yes burn the skin. Remove from heat and put them in a paper bag or pot with a lid, allowing them to steam. This makes the peels slide off easily. You can peel and chop them after about 5-10 minutes. The more seeds you remove the less heat the pepper will have. IMPORTANT * Wash your hands several times after touching chili or use gloves when handling the peppers. It will burn your eyes if you touch them. – Yes, I learned that the hard way. 😊 **If you don’t want to deal with the peppers use canned- they have green salsa that would be good. But it is really easy to do the peppers , so don’t let it scare you. They are so good. To the pot of beans add 2 Tablespoons of chicken bouillon to taste – I used Better Than Bouillon. Any of them will work great. Then add the chicken mixture- and the chopped peppers- ½ cup green chili salsa – known as Salsa Verde 1 tsp of chili powder to taste. Le tit simmer for at least 30 minutes to blend the flavors. To Serve Ladle hot chili into a bowl with white or brown rice in the center. Top with homemade Pico de gallo or store bought salsa. I sprinkled mine with crushed red peppers. (Pizza peppers) Top with sour cream, if you like. You could easily omit the rice and sour cream to cut carbs and fat. There are already carbs in the beans. Quick and easy variation On medium heat add 3-4 cans of beans (drained) in a pan and add 4 cups of chicken broth In a separate pan saute’ a large onion in butter or olive oil till soft – then add to beans. Add about 2 cups of diced cooked chicken. Rotisserie is great, but you could use canned or leftover chicken too. 1 jar of green chili salsa – Salsa Verde - about 16 oz Chili powder to taste about ½ - 1 tsp Let simmer for 15-30 minutes. Add more chicken broth or water if it’s too thick To Serve Ladle hot chili into a bowl with white or brown rice in the center. Top with homemade Pico de gallo or store-bought salsa. I sprinkled mine with crushed red peppers. (Pizza peppers) Top with sour cream, if you like. You could easily omit the rice and sour cream to cut carbs and fat. There are already carbs in the beans.
- Peace on Purpose
This week on the Stress Mastery podcast, Living Right with Bill Cortright, our topic is Connection. I had one final thought about last week’s topic, which was Peace. It really merges with this week’s topic. This morning during my meditation I realized that life is a little bit like the game Blind Man’s Bluff. It’s like you're walking through life blindfolded until you sit down for a moment take a breath and connect to God, The Source of everything, The Holy Spirit. The moment that I closed my eyes and allowed my worldly thoughts vanish- I was immediately connected to peace… Overwhelming peace. Beautiful peace. I wonder why I live so many minutes of my day disconnected from this beautiful source. Staying connected to the present moment is just like removing the blindfold and opening the eyes of your heart. The blindfold, AKA the ego makes life so much harder than it has to be! Peace is available every moment of every day. Rest. Relax. Release. Respond. I love the idea of setting a timer for every hour just to reestablish the connection to God - to take off the blindfold. Check in with your soul. I'm not sure why I allow my moments to be difficult, knowing full well, that peace is available in every moment, I prove this to myself all day long. God is always there ready to connect. Because He is always there… Peace is always there.
- Fall Focus
Autumn is here. I think this is my favorite time of year. The leaves are changing and soon they will be falling. I realize it's super easy to stay focused on eating healthy when it's summer time. I guess partly for me it's because I'm out and about a lot. Fresh fruits and vegetables are abundant many of us have them growing in our own backyard. But don't let the autumn season trip you up. Often we start craving comfort foods when the weather changes and it gets cold outside. I will be posting healthy recipes for fall. Now you can have your comfort food and eat it too. This fall let's focus on living a healthy lifestyle. Keeping our healthy habits while leaving others behind. Commit to maintaining a healthy lifestyle during the autumn season: Embrace Seasonal Produce: As the leaves change colors, so do the options at the local farmers' markets. Take advantage of the seasonal bounty by incorporating autumnal fruits and vegetables into your meals. Apples, pumpkins, sweet potatoes, and Brussels sprouts are just a few examples of nutritious and delicious fall produce. Experiment with new recipes to make the most of what nature has to offer. Prioritize Nutrient-Rich Comfort Foods: Instead of indulging in calorie-laden comfort foods, seek out healthier alternatives that still satisfy your cravings. Opt for homemade soups with plenty of veggies, whole-grain pasta dishes, I choose lean protein sources like roasted turkey or chicken. Warm your soul while nourishing your body. Stay Active Outdoors: Don't let the cooler weather deter you from staying active. Autumn provides the perfect backdrop for outdoor activities like hiking, biking, or simply going for brisk walks in the crisp air. Gather a group of friends or family and make it a seasonal tradition to enjoy nature while keeping up with your fitness goals. Plan and Prep Ahead: With busier schedules and shorter daylight hours, it's essential to plan and prepare your meals in advance. Dedicate some time each week to meal prepping, and have healthy, portion-controlled options readily available. This way, you can avoid the temptation of ordering takeout or reaching for unhealthy snacks when time is tight. I plan my week and my meals on Sunday. I love to watch football, so I work around the schedule of my favorite games. 😊 By incorporating these simple tips into your autumn routine, you can enjoy the season to its fullest while maintaining your commitment to a healthy lifestyle. - Yoga + Wellness Retreat Recap
We had an amazing retreat in Ojo Caliente, New Mexico! We enjoyed the sacred healing springs, and mud baths, and soaking up the sun while it dried on our toasty bodies was a rejuvenating experience. We spent our days practicing Yoga and Tai Chi Cheh, experiencing Reiki treatments and sound healing bowls; some of us even had the opportunity to practice ourselves. Teaching (Green focus Power Hour) setting the day for success and seeing how they enjoyed the practice was truly enriching. Retreats like these often provide a wonderful opportunity for personal growth, self-care, and forming meaningful connections with others. It's a great way for you to make new friends and create lasting memories. Retreats like this can be a fantastic way to nourish both body and soul; as it was for each of us who participated. I'm really looking forward to organizing more retreats and workshops because there's something for everyone to enjoy. The last one was extremely rewarding and a whole lot of fun. I loved seeing them get to know each other and exchange phone numbers! It's exciting to think about what's to come! I am grateful for all who came and made this event fantastic. Thank you. - Christmas is coming...
Here come the holidays! It comes as no surprise that we will have extra expenses at this time of year. It happens at the same time every year. We have all 365 days to get ready, and yet we don't... BUT it isn't too late to be better prepared. Plan now if you haven't started already. There are always at least a few extra expenses during the holidays. Write out all you expenses and a list of what you will need to purchase. What will you be doing? consider gifts, parties, meals, baking, all of it! Don't forget , stocking stuffers add up too. Especially when I was younger, and I had kids to buy presents for. I had to plan because I didn't have much extra money. There were some things we all knew that they were going to get. Things they always needed, like socks and pajamas, Barbies and trucks, hats , scarves and mittens. As they got older, the gifts became more expensive things, but you get the idea. I wanted them to have lots of goodies under the tree... and they did. I still remember starting to reconfigure my budget as early as August. I knew that I wasn't going to have a bunch of extra money in December, just because it was Christmas time. In fact, I lived in the Pacific Northwest, and I had less money because my utility bills were higher. I learned to plan ahead for the holidays, and it worked well for me. I had a great time with my friend Cindi, every year on Thanksgiving night. We would go buy the newspaper on our way home from our respective families and we would sit on the phone together, scouring the newspaper ads for what we needed to buy for our kids. Back then Black Friday was the start of the Christmas season, and we looked forward to the day with great anticipation. We got up and went early. The stores opened at 6 am. Then after shopping, we would go to my parent’s house and eat left over turkey dinner. I digress… I would not have been able to enjoy our annual shopping trip had not budgeted for it. When the sale came up, I had the money in hand. I have never believed in charging on credit cards. I planned, sometimes for several months, and had the money in hand when I knew the best sales would be. This is a fun memory, but also perhaps an idea that will work for you too. Plan ahead, so you can get the most for your money. Being in debt seems a lot like living on a hamster’s wheel to me. Once you get on it, it’s hard to get off.
